Mediterranean Fig Salad
Makes 2 servings
Salad Ingredients
- 4 cups arugula
- 4 figs
- ¼ cup red onion, chopped
- 4 Kalamata olives, pitted and halved
- ¼ cup feta cheese
Dressing
- 6 Tbsp extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 1 tsp garlic minced
Directions
- Whisk together the dressing ingredients and set aside
- Split the salad ingredients between two plates and drizzle each with the dressing and enjoy
