Sweet-potato toast is having a hot moment, which may have you wondering: "Wait...what is sweet-potato toast?"
For starters, it's not actually toast. Instead of bread, you take a slice of sweet potato, toast it, and then load it down with deliciousness. The result not only tastes amazing, but it's also easy, healthy, and a reliable way to work more plant-based foods into your daily routine. “Opting for sweet potato slices is a great way to add a serving of vegetables to your morning meal,” says Alissa Rumsey, MS, RD, CSCS. “Plus, they can cut your carbohydrate intake in half as opposed to traditional toast, which can be a plus for some watching their carbs.”
What's more, not only is this an easy, healthy recipe, but just half of a medium tuber delivers 100 percent of your daily recommended intake of vitamin A, which plays a critical role in healthy vision, skin, and immune function.
Naturally, the ideal toast starts with a solid base. Look for a sweet potato that's firm and large enough to support your ingredients. Then peel it, slice it in ½-inch segments, and toast it just like you would bread—with either a traditional slotted toaster or a conventional oven. But if you opt for the toaster route (like we did, below) have patience. The potatoes will need to go through three or four toasting cycles to fully cook through.
Then comes the fun part: topping your toast. A warm slice of sweet potato is essentially a blank canvas for nutrition, but if you're developing your own recipes, aim for balance. “It’s important to make sure you include some protein and fat, two nutrients that will help keep you full and satiated for longer,” says Rumsey. “If I'm going the sweet route with my sweet potato toast, I'll pair it with a Greek yogurt or cottage cheese to boost my protein intake.”

Feelin’ Cheesy
1 large sweet-potato slice, toasted 2 tablespoons cottage cheese ¼ cup diced pineapple Dusting of cinnamon
Spread the cottage cheese over the sweet potato. Then arrange pineapples to cover the surface and finish with cinnamon.
It’s a Date
1 large sweet-potato slice, toasted 2 tablespoons almond butter 2 dates, pitted and sliced 1 teaspoon honey, drizzled
Spread the almond butter over the sweet potato, arrange the dates to cover the surface, and then drizzle the honey overtop.
Breakfast Special
1 large sweet-potato slice, toasted 1 egg ½ avocado, sliced or mashed Dusting of paprika Salt and pepper to taste
Cook the egg to your preference. Then spread avocado over the sweet potato, layer the egg on top, and finish with the paprika. A truly easy and healthy recipe.

Spread the peanut butter over the sweet potato, arrange the strawberries and blueberries so that they completely cover the surface, and then sprinkle the chia seeds overtop.

1 large sweet-potato slice, toasted 2 tablespoons peanut butter ½ banana, sliced ¼ cup chopped walnuts Dusting of coconut flakes
